If you want something a little different to sip on, beer cocktails are a great way to add variety to your summer drink list.  These recipes make use of Still Spirits that allow you to turn any neutral spirit (like vodka) into a variety of full flavoured, alcoholic beverages.

The Hop Collins

A take on the classic Tom Collins. This cocktails makes use of a hoppy IPA and London Gin. 

  • 2 oz dry gin
  • 1 oz fresh lemon juice
  • 1 oz simple syrup (equal parts sugar & water)
  • 4 oz chilled IPA
  • 1 slice lemon

Combine gin, lemon juice and syrup in cocktail shaker. Fill with ice and shake well. Strain into a Tom Collins glass and top with IPA. Garnish with lemon slice.

Peach Moon

If you want a beer cocktail with a citrus punch, this is the one for you. Named after the original recipe that uses Blue Moon beer, but any wheat beer will do just fine.

  • 12 oz Belgian wheat beer
  • 2 oz Peach Schnapps
  • 3 oz orange Juice
  • 1 orange slice

Slowly pour Belgian wheat beer into glass halfway. Add Peach Schnapps and orange juice. Top with remaining beer. Stir gently and garnish with orange slice. 

Raspberry Beer Mojito

A spicy and fruity reinvention of the classic Cuban cocktail.

  • 1 1/2 oz Spiced rum
  • 1/2 lime, chopped
  • Mint leaves, crushed
  • 6 oz Raspberry beer

Put chopped lime and spiced rum in a highball glass and muddle them with a muddling stick or the end of a wooden spoon. Add ice and crushed mint leaves. Add raspberry beer & enjoy.
